Chicken and Broccoli Rice Bake recipe:
1 Tbsp. oil
1 lbs. chicken breasts, cut into bite size pieces
3 small cups broccoli florets
1 onion chopped
1 cup chicken broth
1 1/2 cups instant white rice, uncooked
1 tub Philadelphia Italian 3 cheese cooking creme
1 cup Kraft Swiss Au Gratin shredded cheese
Heat oven to 375 degrees F
Heat oil in a large skillet, add chicken, broccoli and onions; cook and stir 5 min.
Stir in broth; bring to a boil
Add rice and cooking crème; mix well
Spoon into 8-inch square baking dish sprayed
Top with shredded cheese. Cover
Bake for 25 min. or until heated through, uncover for the last 10 min.
Instead of 3 cheese cooking crème I used Herb and Garlic crème. I also substituted 4 cheese Italiano cheese in place of the Au Gratin shredded cheese. If you are a health nut a different type of rice could also be exchanged for the instant white rice, although you may need to cook it first. This dish was a hit in my household and did not last for long! Bon appetit!
Interesting tidbit: Rice is the most important grain for nutrition and caloric intake. It provides more than one-fifth of the calories consumed worldwide by humans. Rice originates from 8200-13500 years ago in China.
