It is quite an easy recipe to follow, with minimal prep time which is right up my alley. Some of you may have seen this recipe or one similar to it but maybe have been wondering if it is worth trying. I say anything is worth trying once and I will say this is a recipe that I will use over again. Instead of chicken thighs I substituted chicken breasts as I am more of a breast than a leg lady (hahaha)!
Here is the recipe:
1 Tbsp Zesty Italian Dressing
8 chicken thighs
1 can Italian style diced tomatoes undrained (540mL)
2 small red peppers chopped
1/3 cup tomato paste
3 garlic cloves minced
1/2 cup mozzarella shredded cheese
1/4 cup Parmesan cheese
Heat the dressing, add chicken and brown.
Combine tomatoes, peppers, tomato paste, garlic and pour over the chicken.
Cover and simmer 20min. or until the chicken is done cooking.
Remove skillet from heat, top chicken with cheeses, cover and let stand for 5 min.
Drain the spaghetti and then top it with the chicken and sauce.
Interesting tidbit: Cacciatore literally means "hunter" in Italian. In cooking it means a meal prepared "hunter-style" with tomatoes, onions, herbs, bell peppers and sometimes wine. It is popularly prepared with chicken or rabbit.
